What do I do with it? is a regular question at Farmers markets.
These pancake squashes do not want to be confused with the juicy yellow round courgettes which are the same as the green courgettes, but slightly sweeter.
Simple squash recipie
4 Custard Squashes, trimmed and cubed. Tablespoon sesame seeds. Butter .
Tablespoon fresh Thyme.
In a dry frying pan heat the sesame seeds till they start to brown but do not brown. Set aside. Melt the butter in the frying pan, add the squash cubes, cover and sauté for 5 mins, until soft and turning golden brown.
To serve sprinkle the sesame seeds and Thyme, enjoy!
