SPINACH SOUP

SPINACH SOUP-

Lightly fry an onion. Add 2 bags of fresh spinach and pour boiling water from ketle to cover

it when it is packed down.  Let it wilt. Do not cook any more. Add veg stock cube, Blend. Pour in i can (or 2 if you want) of coconut milk light at the last minute to get the coconut taste. Grate nutmefg on top. Serve. .
