1 bunch finely chopped Kale
1 finely chopped shallot
1 or 2 cloves of garlic
½ an inch cube of fresh ginger chopped fine
3-4 chopped green chillies (or less depending on your taste!)
3 tablespoons coconut powder
½ an onion, finely chopped
2-3 teaspoons oil
1 teaspoon salt
1 teaspoon mustard seeds
¼ teaspoon Turmeric powder
A pinch of cumin seeds

Heat the oil in a shallow non stick pan.  Add mustard seeds and then shallots.  When the shallots start turning brown, add the kale then the onions, ginger, garlic, salt, cumin seeds, coconut powder and turmeric powder.  Mix well and keep the vessel open.  Stir occasional until it is fully dry.
