Ingredients
500g potatoes (approx. 3 medium potatoes)
1 cup plain flour
Method
1. Boil the potatoes in skins, peel and mash while still hot. Cool slightly.
2. Gradually add sufficient flour to form a soft dough.
3. Knead into a ball and separate into 6 equal portions.
4. Roll each portion into a 1cm thick roll and cut into 1cm long pieces.
5. On a floured surface, press and roll each piece lightly with the back of a fork.
6. Cook in plenty of boiling salted water until gnocchi rises to the surface. Serve with a tomato-based pasta sauce.
