Ingredients
2 medium potatoes, peeled, chopped
1 zucchini, grated
1 egg, lightly beaten
1 cup instant oats
2 tblspn barbecue sauce
1/2 bunch chives, finely sliced
1 tblspn chopped parsley
Bread rolls to serve
Method
1. Microwave potatoes for 6 minutes. Transfer to a large bowl. Mash potatoes until smooth.
2. Add grated zucchini, chives, parsley and egg. Mix well. Fold through oats and barbeque sauce.
3. Shape mixture into 4-6 patties. Dust with flour.
4. Bake at 180°C for 20 minutes. Serve patties in bread rolls with salad.
