Aubergine is very low in calories and fats but rich in soluble fibre content.
Its skin has significant amounts of the phenolic flavonoids, anthocyanins. Scientific studies have shown that these anti-oxidants have potential health effects against cancer, ageing, inflammation, and neurological diseases.
