This bacon comes from Clitheroe based, award-winning farm Gazegill Organics.
It is cut from the rib end of loin and dry cured using their traditional recipe. The organic loin is from their rare breed organic Oxford Sandy and Black pigs, outdoor reared and slowly grown for a full flavour. The streaky is taken from the belly and is a versatile cut for use in many recipes.
Most bacon today is brine injected producing a rapid cure where a lot of moisture is retained and this is evident during cooking, with their nitrate free home cure, Gazegill use sea salt and organic molasses to draw the moisture for up to 2 weeks, we then wash and hang our chosen cut to dry for a further 10 days, this process gives us a stunning dry cured bacon which is how bacon should taste.
Warm crusty bread, bacon with melting butter, think about that without your mouth watering…
Please tell us where you would like us to leave this product if you are not going to be in. It needs to be kept cool to prevent spoiling, we suggest that you leave out a cool box for your driver but a shady spot may work just as well!
PLEASE NOTE: We do not keep spare supplies of meat on site. This product is ordered especially for you as as such we need a little advance notice. The butcher needs our orders on a Friday morning for the whole of the following week so please bear this in mind when placing your order. Unless we receive it by 9am on a Friday morning we won't be able to guarantee to have your meat the following week.
