In the summer months we grow our own pattypan or can easily get them from local sources. At other times of year we will always look to source as close to home as we can.
Pattypan is a variety of summer squash with a round, shallow shape and a scalloped edge. They are really versatile, tasting equally good stuffed and baked whole as eaten raw, fried or steamed.
Reasons to eat summer squash:
An excellent source of potassium, an important intra-cellular electrolyte. Potassium is a heart-friendly electrolyte and helps bring the reduction in blood pressure and heart rates by countering pressure-effects of sodium.
Contain folates, important for cell division and DNA synthesis.
