A hard shelled, winter variety of squash. These squash are a perfect size and shape for stuffing and whole roasting but they are also great roasted, pureed and used as a basis for all manner of baking.
Don't waste your squash seeds either, soaked and dehydrated roasted or toasted they make a nutritious snack or addition to a meal.
