Tomatoes are packed full of natural antioxidants including Vitamin C and beta-carotene. They have been shown in studies to be really good at protecting your heart too, both helping to lower cholesterol and in stopping unwanted clots forming in your blood cells. Tomatoes are one of a small group of foods whose nutritional benefit can be maximised when they have been cooked, although this slightly decreases the Vitamin C content it increases the bio-availability of lycopene and other antioxidants in the fruit.
